On a warm summer outing, Boury awaits.
The setting for the Boury gastronomic experience is a beautifully restored 1950s villa near the heart of Roeselare. Surrounded by a lush garden, the property immediately evokes a sense of welcome and tranquility. We began our visit on the serene outdoor terrace, which overlooks a striking stainless-steel open kitchen and bar—an elegant space where pre- and post-meal drinks are served, weather permitting, with a view of the culinary activity.
Despite the gentle summer breeze, we settled comfortably on the terrace and commenced our journey with a glass of champagne. A generous selection of amuse-bouches followed, featuring bluefin tuna, crab with calamansi, and pesto mizuna with smoked mackerel—each bite a preview of the precision and creativity to come.
When the dining experience starts, we were graciously invited into the dining room. Designed to accommodate approximately 50 guests, the space exudes warmth and sophistication, with a cozy salon area, abundant natural light from floor-to-ceiling windows, and a palette of earthy tones complemented by wooden floors and thoughtfully curated artworks.
Chef Tim Boury’s culinary philosophy is evident in every detail. His kitchen celebrates premium ingredients—often luxurious—paired with refined accompaniments and flavors, many of which are sourced directly from the restaurant’s own herb and vegetable gardens. This deep respect for the product is matched by a spirit of innovation, resulting in dishes that are both grounded and exploratory.
Highlights from our menu included delicately poached langoustine with XO sauce, celeriac, sea buckthorn, and almond; Eastern Scheldt lobster with white asparagus; morels served with Jerusalem artichoke and black truffle; and summer venison accompanied by beans, cherry, and sakura.

Dessert elevated the experience further, with a vibrant presentation of strawberry varieties enhanced by elderflower, sorrel, sumac, and lovage, followed by a rich and satisfying cheesecake—an elegant conclusion to a memorable meal.
