Nestled within one of Belgium’s most picturesque dining settings, Colette De Vijvers offers an exceptional gastronomic experience framed by serene natural beauty. Now located in a new venue, when we were there, the restaurant overlooks a tranquil lake and is enveloped by the lush Averbode forest, creating an idyllic backdrop for fine dining.
Situated in the quaint town of Averbode in northern Belgium—renowned for its historic Averbode Abbey, founded in 1134—Colette De Vijvers occupies a private estate accessible via a scenic wooded driveway. Guests park a short distance from the restaurant, allowing for a brief, immersive stroll through the forest that sets the tone for the experience ahead.
The dining room is a harmonious blend of classic elegance and contemporary flair. Floor-to-ceiling windows flood the space with natural light and offer uninterrupted views of the surrounding landscape, while generously spaced tables ensure comfort and privacy. The interior design features crisp white tablecloths, refined gold accents, and curated modern art pieces, evoking a sophisticated, French-inspired ambiance that complements the culinary philosophy of Chef Thijs Vervloet.
Chef Vervloet is a distinguished proponent of refined, French-influenced cuisine. His approach is rooted in tradition yet refreshingly modern, characterized by nuanced flavors, rich sauces, and the use of premium ingredients.
